Four, count 'em, four eggs in the nest box this morning.
One of them blue.
Gonna have to take another carton of excess eggs to the new-ish neighbor soon... during some break in the upcoming rain. Be a chance to get a report on how his relatives who came out for Thanksgiving liked the area. Seems they're city folk, and some of them flatlander city folk with no experience driving over hills, so this might have been something of an adventure for them.
I used to cook & feed the eggs back to the chickens, I didn't want them used to eating "eggs". Think scrambled eggs in the compost for the chickens to pick thru later.
Deviled eggs are good if they fit in your diet. That was one of my favorites when there were too many eggs.
Instapot hard boiled eggs. Put a cup of water in, put the eggs in on the trivet, close it and pressure cook for 5 min, let bleed off for 5 min then open.
Eggs into ice water, after awhile take one out, put it in a big enough glass or coffee mug, cover the top and shake vigorously for a moment, rinse the shell off in the sink & repeat until your finished.
Cut in half, set the yolks in a bowl, add some mayo or horseradish sauce, add some chopped pickles or jalapenos (personal taste thing). Mix & return to the empty egg white halves.
